Soil depletion has many causes but it is primarily a result of corporate farming methods. For thousands of years, farmers have known that soil rotation was essential in keeping the soil from becoming a useless wasteland. Today, in the name of profits, most corporate farms don't perform required soil maintenance. They simply add three items (nitrogen, phosphorus and potassium (NPK), and sometimes calcium) to the soil. This makes the plants grow full of calories, water and fiber but void of the complete nutrition you need. This has been happening for fewer than 60 years, but getting worse every year. Eating fresh produce is a strong recommendation but do not be fooled. If it's not in the soil, it's not in the plant you eat!
There is unfortunately far too much produce being grown in soil that has less than the full complement of nutrients we need. "How can this be?" you might ask. It only takes NPK to make a plant grow, but it takes many more than those three nutrients to make and keep us healthy. Trace minerals are missing, or at least deficient, in many areas now. There is little hope of that situation improving in the near future. These trace minerals are required in micrograms, rather than milligrams, but the key word here is "required".
