The Secret of Tomatoes!

We have all heard that tomatoes are good for prostate in men and much is said about the Mediterranean diet - attributed to the high number of one hundred year olds, particularly on the island of Crete. The olive oil is said to be the number one reason.
Latest research indicates that it is the tomato, rich in lycopene, which extends the life of the island's residents. (Lycopene also reduces the risk of prostate cancer by 40%, according to the work of W. Giovanuci, Harvard Medical School) However raw tomatoes and tomato juice contain lycopene that is difficult to absorb. Tomatoes must be prepared in a special way in order to take full advantage of their benefits.
Lycopene is in papaya (paw paw) and above all ripe tomatoes. Lycopene is absorbed by the classic route taken by carotenoids, says Dr. J. P. Willem in 'The Keys to Extraordinary Longevity'. 'Tomatoes cooked in the presence of lipids increases its absorption (stuffed tomatoes) and lipids liberate the most lycopene which can be directly assimilated by the body.' Lipid is a substance which has the general properties of fats, so I guess this is where the olive oil comes in to play.
